Another entry from the Clean Soup book tonight.
The weather outside is awful, which helped me get excited for making this. It rained all day, then right after lunch time the temperature abruptly dropped, freezing everything over, and switching the rain to hail. It’s snowing now. Thankfully Chris had her last meeting cancelled so she got to come home early.
There’s a step in this soup where you add part of it to a food processor, blend it, then add it back, to help make it creamy. I overfilled the processor, and it shot a bunch of liquid out around the edge of the lid, making a bit of a mess for me to clean up, but other than that, this was simple to make and tastes wonderful.
